Carrot Pupcakes

While I love to cook food for people, I adore making treats for my dogs. Whether it’s an easy broth or a sweet treat, I truly enjoy how happy they get when I break up their everyday kibble diet.  One of my favorite treats to make Peeps & Paisley are Carrot Pupcakes.

Carrot Pupcakes are a healthy, dog-friendly spin on carrot cake. There are so many reasons I love to make these for the pups. First of all, these pupcakes contain dog-friendly ingredients and are perfect for a birthday or celebration. They are a great serving size, easy to transport, and are topped with a healthy Greek yogurt frosting. Carrot Pupcakes are an excellent treat and will absolutely to make your dog’s day!

Carrot Pupcakes

Ingredients:
Cake
1/2 cup carrots, shredded, plus more for garnish
1/2 cup peanut butter
3/4 cup apple sauce
1/4 vegetable oil
1 cup whole wheat flour
1 tsp baking powder
2 tbsp honey
1 tsp vanilla
1 egg

Icing
1/2 cup greek yogurt
1/4 cup peanut butter
1 tbsp honey

Instructions

Preheat the oven to 350°F.

In a large mixing bowl, mix peanut butter, oil, apple sauce, vanilla, and honey. Mix in egg, then stir in flour and baking powder until just mixed. Fold in shredded carrots until well-mixed.

Take a greased muffin pan and fill each muffin cup 2/3 full. Bake in the oven for 15-20 minutes, or until the cake tester comes out clean. Remove from oven and cool for 10-15 minutes. Once the muffins have cooled after a few minutes, remove the cakes from the muffin pan and cool on a wire rack.

Using a clean bowl, whip yogurt, peanut butter, and honey until well-mixed. Frost the cakes with the yogurt mixture and garnish with shredded carrots.

Before serving to your pup, please cut the cakes into bite-size pieces!
