Strawberry Shortcake with Vanilla Creme Fraiche

Strawberry Shortcake is one of my summertime favorite desserts. While I’m normally drawn to chocolate-based sweets, there’s something special about biting into fresh strawberries, cream, and biscuits in the warm summer heat. My dad used to make us angel food cake, strawberries, and vanilla ice cream in the summer when we were kids, and I don’t think I’ve ever gotten a carwash without buying a strawberry shortcake ice cream bar. Strawberry shortcake comes in all different shapes and sizes, and it’s always so delicious!

I was inspired to make this dessert after my trip to Swanton Berry Farm. I hope you enjoy my take on strawberry shortcake as much as I enjoyed making it!

Strawberry Shortcake with Vanilla Creme Fraiche

4 cups ripe strawberries, hulled and cut in half
1/3 cup sugar
4 cups flour
4 tbsp sugar
1/3 teaspoon salt
4 teaspoons baking powder
1 1/2 cups half & half
1 1/4 cup butter
5 oz creme fraiche
1/3 tsp vanilla extract


In a mixing bowl, mash one cup of strawberries to release the natural juices. Add the remaining three cups of strawberries and 1/3 cup of sugar. Mix until the berries are well-coated in sugar and juice. Set aside.

Preheat oven to 425 degrees and lightly grease a baking sheet.

Mix flour, 4 tablespoons of sugar, baking powder, and salt together in a large mixing bowl. Add in softened butter and mix into dry ingredients. Add half & half and mix until the dough is soft and homogeneous. Knead the dough on a floured surface for about a minute or two, and roll out the dough to about an inch thick. Use a large biscuit cutter (2.75″-3″ width) to cut 8 rounds.

Place the rounds on the prepared baking sheet. Bake the dough for 10-15 minutes or until lightly browned.

While the dough bakes in the oven, mix creme fraiche and vanilla extract in a small bowl. Set aside.

Cut the biscuits in half horizontally. Place the bottoms on a serving dish or a place, spoon strawberries, a dollop of creme fraiche, and another spoonful of strawberries, then place the shortcake tops on top of the filling. Top off with more creme fraiche & berries if desired. Enjoy immediately.
